I came across this recipe many years ago from Oprah’s website! If you’re looking for a nice, comforting yet hearty soup… this is IT! It’s probably my favorite soup to make, and definitely my favorite one to eat!!! It’s also a great soup to make for the New Year for those of you who like to get your Black Eyed Peas in

COLLARD GREEN & BLACK EYED PEA SOUP:
1- 2 pounds chicken wings
4 cups chicken stock
1 onion, chopped
4 cloves garlic, minced
1 ½ cup canned stewed tomatoes (I cut these into smaller pieces as well)
1 tsp ground cumin
1 tsp dried oregano
Salt and pepper to taste
4 potatoes , peeled and cubed
1-2 cups black-eyed peas
5-6 cups collard greens , chopped
Add the chicken wings and stock to a large pot. Add the onions, garlic and spices and bring to a boil. Reduce the heat, add the stewed tomatoes. Simmer. When the wings are tender, add the potatoes, black-eyed peas and collard greens.
Cook on med-high for 30 minutes. Remove the chicken wings and allow them to cool about 10-15 minutes. Carefully remove the chicken meat from the bones, and add it back to the soup. Cook for another 5-10 minutes and you’re done!

I’ve never cooked with black eyed peas, but this sounds great….do you have to soak the beans prior to adding them?
Thanks Angie! I use the frozen black eyed peas so all that’s required is that you cook them til they’re almost done, and then dump them in the soup!
